Abstract:
ObjectiveTo analyze Salmonella contamination status of raw poultry and livestock meat in 2011-2014 in Jiading District, then providing theoretical basis for Salmonella detection, supervision, control and its safety management.The dominant species of bacteria are Salmonella enteritidis, S.typhimurium, Salmonella derby, Salmonella Indiana.
MethodsOn the basis of criterion of national food sanitation examination method (GB 4789.4—2010) were determined Salmonella contamination and its serologic type.
ResultsA total of 600 samples of chilled meat were examined from 2011 to 2014, and 154 strains of Salmonella were isolated and the total positive rate for all samples was 25.67%.The total positive rate for chickens was 29.86%.Chicken meat was the most seriously contaminated, followed by the chilled meat of duck, pork, beef and lamb, for 28.33%, 27.78%, 20.83% and 17.71%, respectively.
ConclusionThe chilled meat of poultry and livestock in Jiading District has been contaminated by Salmonella in different degrees, surveillance should be enhanced to ensure food safety and food risk monitoring network system is improved and perfected.
