  • 摘要: 偶氮甲酰胺近年来受到关注,因其可同时被用作为食品添加剂和工业用品,引发民众对面包等小麦制品的担忧。本文对偶氮甲酰胺的理化性质、用途、代谢及其对人体健康的影响进行文献综述,并深入探讨了偶氮甲酰胺对人体健康造成影响的可能性,评估其安全性。

     

    Abstract: Azodicarbonamide (ADA) is a man-made chemical being used as both food additive and industrial products, and has caused public worries about wheat products as bread in recent years. In this article, in order to assess the potential risk of ADA on human health, we reviewed literature on the physical and chemical properties of ADA, as well as its application in human lives, its metabolism and its reported health effects on human.
