上海市2008年猪肉相关食品中镉污染特征分析

Cadmium contamination in pork and its related foods in Shanghai in 2008

摘要: 目的了解上海市猪肉相关食品中的镉污染状况。方法在全市各大型超市、卖场、菜市场中抽取猪肉相关食品190份进行镉的检测。结果猪肉相关食品镉含量基本符合污染物限量国家标准, 猪内脏类食品中镉含量较高, 其中猪肾镉含量为0.020~0.520 mg/kg, 猪肝镉含量为0.012~0.260 mg/kg。结论按照我国相应标准限量判断, 本次调查中猪肉相关食品的镉污染并不严重, 但考虑到监测的数量和品种有限, 有必要继续加强上海市相关产品污染物监测工作, 科学指导销售和食用, 保障人民群众健康。

Abstract: Objective To investigate the cadmium contamination in pork and its related foods in Shanghai. Methods A total of 190 samples of pork and its related foods were detected in the survey.Cadmium was measured with atomic absorption spectrophotometer (AAS). Results The contents of cadmium in pork and its related foods examined were basically lower than the maximum levels of cadmium stipulaled by national standards, however cadmium contamination were found in kidney and liver, i.e.mean cadmium concentration in kidney and liver were 0.020~0.520mg/kg and 0.012~0.260 mg/kg, respectively. Conclusion According to the national health standards, the cadmium contamination in pork and its related foods investigated in the study was not serious, but it is necessary to further strengthen the food safety control.
